Plinko has a global win limit set at $200,000 per bet for all Plinko board combinations (Risk x Rows). The bet limit is adjusted based on the highest multiplier the board can payout.
Example: For Extreme risk and 16 rows the highest multiplier is 2000x and bet limit is set at $100.
